Fresh garden Thai-curry

Ingredients Serves: 4
1 big bunch pea shoots (Closed loop farm)
Few basil leaves (Closed loop farm)
1 garlic, finely diced (Closed loop farm)
1 onion, finely chopped (Closed loop farm)
1 tablespoon sugar
2 tablespoon oil or butter
2 tablespoon Thai red curry paste
1 tin (400ml) of coconut milk
8 cherry tomatoes, cut half (Closed loop farm)
Sliced mushrooms or salmon or chicken
Preparation:5min › Cook:10min › Ready in:15min
Heat oil over medium high heat, wait until it's hot, and then add garlic and onion. Stir until onion is translucent, then add Thai curry paste, followed by mushroom/fish/chicken.
Stir until mushroom/fish/chicken is fully cooked.
Add coconut milk, sugar and pea shoots.
Garnish with a sliced tomatoes and basil.
Serve with rice or noodle.
